BBQ Chicken Tacos
Ingredients
6 chicken drumsticks
1 medium onion, SLICED
1/2 C BBQ sauce*
Juice of half a lemon
1 TSP smoked paprika
1 TSP dried oregano
1 TSP salt
1/4 TSP black pepper
3 medium sweet potatoes, large chunks
1 TBSP melted ghee or oil of choice**
corn tortillas
Extra BBQ sauce
Grated cheddar
Shredded lettuce
Pickled cabbage
Guacamole or mashed avocado
Lime juice
Method
Preheat fan oven to 180°C/ 400°F.
In a large bowl, toss the chicken, onion, lemon juice, smoked paprika, dried oregano, salt and pepper. Add to a large baking tray with the sweet potato and a drizzle of melted ghee or oil and roast in the oven for 45 mins, flipping halfway though.
Make sure the chicken is cooked through and allow to cool for about 10 minutes before cutting the meat off the bones.
Assemble the tacos. Add about 1 tablespoon of BBQ sauce to the corn tortilla, sprinkle a little grated cheese and put back in the oven for 5-7 minutes.
Add the lettuce, pickles, guac and a squeeze of lime (or whatever else your heart desires) and enjoy!
* For a healthier sauce option, I recommend Primal Kitchen’s BBQ sauce. If you’re in the UK, Dr Will’s is a great low-sugar option
** I recommend using either ghee, extra virgin olive oil or even algae cooking oil! This is a healthy cooking oil that is high-heat stable and has a very neutral taste.
