Pistachio Protein Chocolate bars
Creamy, sweet, and decadent, these pistachio protein chocolate bars give us ice cream energy straight from the freezer. Nutty, protein-packed, and coated in rich dark chocolate, they make the perfect nourishing snack or post-workout treat.
Ingredients:
1 C pistachio slivers or shelled pistachios
1/2 C pea protein powder or protein of choice
1/2 C bovine collagen
1/4 - 1/3 C honey (adjust to taste)
2 TSP vanilla extract
1/4 TSP flaky salt
1/4 (or 1/8*) C Greek yogurt
1/2 c chopped pistachios
270 g/ 9.5 OZ 70% dark chocolate
Method:
Grease and line a small loaf tin.
In a blender or food processor, combine pistachios, protein powder, collagen (if using), honey, vanilla, and salt. Blend until smooth, scraping down the sides as needed.
Add Greek yogurt and blend again until smooth.
Pour the mixture into the prepared tin, spreading evenly. Sprinkle the chopped pistachios on top, pressing them down lightly.
Freeze for at least 8 hours or overnight.
Once set, melt the dark chocolate. Slice the pistachio filling into bars, then dip each bar into the melted chocolate, coating fully.
Place the chocolate-covered bars on a drying rack or parchment paper, then transfer them back to the freezer to set.
Sprinkle with flaky salt, and enjoy!
Notes:
Pistachio slivers result in a smoother texture and a more vibrant green filling. They can be found in Persian or Middle Eastern stores or online. If unavailable, regular shelled pistachios work just fine. If not using collagen.
If you’re not adding collagen, start with 1/8 C greek yogurt and increase up to one-quarter cup as needed.
