Borani Baghali (Yogurt Fava Bean Dip)
This is a dip dish I came up with for a friend’s summer potluck and IT WAS A HIT. It’s comprised of fava (broad) bean, fried onion, garlic, dill and walnut and it is true decadence. Really good with toasted or warm bread (preferably flatbread) or as a side with a rice dish with a fresh crunchy salad. Perfect for picnics, BBQ’s, dinner parties or whatever the occasion! There’s always an excuse to make and consume Borani Baghali.
27oz/750g strained yogurt* (roughly)
1-2 tbsp oil/ ghee
2 medium red onions
3 cloves garlic, thinly sliced
14oz/ 400g peeled fava (broad) bean
2 C chicken bone broth/ veg broth
Small bunch of dill, finely chopped
1/2 c walnuts, chopped
Juice of 1/2 lime
1 tsp sumac
salt & pepper to taste
Fry onion on medium heat until it’s super soft and starts to brown. Add the garlic and cook until they start to brown, add fava bean, salt and pepper and cook on medium-high for 5 minutes while mixing frequently.
Switch heat to medium-low, add bone broth and cook with lid on for 15-20 minutes, or until the liquid evaporates and the beans are soft. Take off heat and allow to cool completely.
Add the yogurt to a mixing bowl, followed by bean mix (option to reserve a few tablespoons for topping when plating up), dill, walnuts, lime, sumac and salt and pepper to taste. Mix until combined.
Serve on a cute dish, top with the reserved beans, a drizzle of oil, some chopped dill, walnuts and rose petals for garnish. Enjoy!
