ranginak date bark
ranginak date bark is the best date bark you’ll ever have. as a person who has made much date bark, i think you can trust me.
ranginak is an existing persian date dessert, i just flattened it into bark form. the process of cooking the flour in hot butter makes your house SMELL INCREDIBLE. just keep an eye on it because it goes from toasted to burnt real quick.
ingredients
16 pitted medjool dates
1 cup walnuts
1/2 cup (112g) unsalted butter, melted
1 cup oat /wholewheat flour
1 teaspoon cinnamon
1/2 teaspoon cardamom
pinch of salt
1 cup pistachio slivers/ desiccated coconut/ nut of choice ground up for topping
instructions
in a frying pan, toast the walnuts on medium-high heat, stirring every so often until fragrant (5-8 minutes) and set aside.
in the same pan, switch heat to low and melt the butter
while the butter melts, pit and flatten the dates. arrange walnuts on top and press (slightly crush) i used a rolling pin to help flatten the walnuts.go back to the butter, turn the heat to medium-high and combine the flour with a rubber spatula. keep stirring, making sure to scrape the base so it doesn’t burn until it thickens up slightly. take off heat when it smells toasty and fragrant - kinda like popcorn. mix in the cinnamon, cardamom and salt.
pour the mixture on top of the dates. let it cool for about 5 mins.sprinkle the ground pistachio on top and press down gently but firmly.
allow it to cool and set in the fridge for a couple hours before slicing.
