PB Cookie Dough Protein Bars [No Bake]

Ingredients
1/2 cup peanut butter
1/2 cup light raw honey
1 tbsp coconut oil
1 tsp vanilla extract
2 TBSP filtered water (more may be needed)
1 cup unflavoured protein powder*
2/3 cup oat flour
1/4 tsp flaky salt
1/2 cup chocolate chunks or chips
100g/ 3.5oz 70%+ dark chocolate, melted (for topping)
Optional for finishing:
Flaky salt
Rose petals
Method
Mix the wet ingredients: In a medium bowl, combine the peanut butter, honey, coconut oil, vanilla extract until smooth and water.
Add the dry ingredients: Stir in the protein powder, oat flour, and flaky salt until a dough forms (add more water if needed)
Fold in the chocolate: Gently mix in the chocolate chunks or chips.
Shape the bars: Press the dough into a lined 8x8-inch pan, spreading it evenly.
Melt the chocolate: In a microwave-safe bowl or over a double boiler, melt the dark chocolate until smooth. Spread it evenly over the cookie dough layer.
Chill: Place the pan in the refrigerator for at least 1 hour or until the mixture is firm.
Cut and finish: Slice into bars. If desired, sprinkle with flaky salt and rose petals for an extra touch.
Store: Keep in an airtight container in the refrigerator for up to a week.

Peanut butter can be substituted with any nut or seed butter, like almond or sunflower butter, to suit your preference.
