Sweet & Savoury Ricotta Date Canapés
A sweet, salty, crunchy, chewy bite that feels fancy but takes minutes to make. Perfect for a dinner party, get-together, or just for yourself.
Ingredients:
- 12-14 Medjool dates
- ½ cup ricotta cheese
- Pinch of nutmeg
- Pinch of sea salt
- ¼ cup toasted walnuts (see instructions below)
- Parmesan shards (see instructions below)
- Fresh thyme, for garnish
- Optional: Drizzle of honey
Instructions:
Make Parm shards: Preheat oven to 200°C (400°F). Line a baking sheet with parchment paper. Grate fresh Parmesan and arrange into a large oval. Bake for 5-7 minutes, until golden and crisp. Let cool completely before breaking into pieces.
Blend ricotta cheese with nutmeg and sea salt until smooth. Set aside.
Split each Medjool date open and remove the pit.
Lightly grease the bottom of a glass cup and press down on each date to flatten slightly. This helps create more space for the filling and makes them look fancy.
Toast walnuts: Heat a dry pan over medium heat. Add walnuts and toast for 3-4 minutes, stirring frequently, until fragrant and slightly golden. Remove from heat and let cool before roughly chopping.
Spoon the ricotta mixture into each flattened date. Top with toasted walnuts and a small piece of Parmesan shard.
Garnish with fresh thyme and an optional drizzle of honey.
